Summer is all about eating and enjoying the freshest herbs and vegetables. I plant a variety of tomatoes and make fresh sauce throughout the summer, but my bruschetta with fresh tomatoes and basil is A-M-A-Z-I-N-G! I serve it as an appetizer with bread, mixed in with pasta, and as a side with fish and chicken. Yum!

There is nothing better than a fresh tomato bruschetta in the summertime, especially with tomatoes picked right from your garden or fresh from the farmer's market locally. Supporting local farmers is important. Can you we just talk for a minute about the positive effects of the tomato?? Tomatoes are loaded with health-protective antioxidants such as lycopene, vitamin C, and vitamin A -- yet they have very few calories.
When making a bruschetta, you can mix in plum, cherry, grape, big boys...whatever you've got growing will do.

2 Cups tomatoes
1/2 Cup chopped fresh basil
1/2 Cup Reggiano parmesan cheese grated
3 cloves garlic crushed
drizzle of virgin olive oil (first cold pressed)
salt and pepper to taste
