Big Breasts

I'm talking about chicken..not boobs. My friends keep telling me that I should be using my time creating a cookbook...not a blog. Maybe they're right..but in the meantime, I can do both by sharing my fav recipes on my site. It is no exaggeration that I have no less than 50 chicken recipes alone up my sleeve. Chicken was a staple in my home growing up. And my dad will deny it, but we ate A LOT of it, and it was cooked one way..baked. seasoned and baked. That was it. Now, I understand it's affordable, high in protein, and good for you. So, I completely get why we ate so much of it. I'm not that different from my parents, we eat a lot of chicken in my house, and with four kids, I had to get creative. My boys are picky and like variety..my girls are pretty easy going so there's that.


With gardens in the the full swing of blooming organic and bountiful vegetables, it's the perfect time to add those veggies to your chicken dinners. I found this recipe on Delish and LOVED it because it's super easy and is healthy. I've made a few changes to minimize the ingredients..I like things easy.



Chicken Primavera is a favorite of mine because you can use whatever veggies you have available..top it with or without mozzarella..up to you.


I grabbed this recipe from Delish and improvised.


Ingredients


- Big boneless chicken breast halves

- Thinly sliced vegetables cut in half-moons if round: tomatoes, zucchini, onions, peppers, (your choice..use what you have available)

- Olive oil

- Seasonings: kosher salt, pepper, garlic powder, onion powder

- Mozzarella


Directions


Preheat oven to 400°, make slits in chicken breasts but do not slice through. Stuff with your desired vegetables. Drizzle with olive oil and then season. Sprinkle with mozzarella. Bake until chicken is cooked through..I would say 30 minutes and NO LONGER PINK (could be a little longer.


*When I use really big breasts, they take about 5 minutes longer

*Kosher salt is the must have salt you need in your kitchen
